Visitors may have noticed that there is an awful lot less of me than there used to be. By the end of 2016 I realised that if I didn’t do something drastic I wouldn’t be able to continue to do the work necessary to look after the animals. I was not only very overweight but was suffering from fibromyalgia involving lots of pain and fatigue. Jennifer had successfully used 5:2 fasting to lose a significant amount of weight. I was inspired by her example to look into it. I began fasting every other day in November 2016. I rapidly felt better even before I had lost much weight. I realised that what and when I eat has a significant effect on how I feel. I already did not eat sugar having realised how addictive and ultimately unsatisfying sweet things are. I now also stopped eating bread or any other grain containing food, and stopped eating early in the day as it only makes me feel sluggish and in pain. Later I realised it is not only grain that I can’t tolerate, but tomatoes and fresh beans also cause me pain. My hands are arthritic and were becoming less and less useful. I could hardly hold a pen before cutting out these foods but within a month of eliminating them the pain and swelling was gone, and I regained quite a bit of function. At the same time I stopped needing my inhaler for my asthma. The weight loss was just a bonus on top of the huge benefits to my health. Over the course of the next year I lost over 100 lbs, about 8 stone. I feel at least twenty years younger and no longer have any worries about being able to continue to run the Sanctuary for many years to come.
I have developed a way of eating that avoids inflammatory triggers, nutures gut bacteria and yet is satisfying and delicious. I am recording the recipes that I have come up with and thought I would post them here in case anyone would like to try them.
